We choose the best varieties and harvest as late in the fall as possible. This results in an accumulation of sugars in the roots and amazing flavor.
We are pesticide-free, use minimal tillage, and plant lush cover crops yearly. Our storage system uses cold winter air and solar-power to keep your roots fresh and reduce our carbon footprint.
